
I am going to start this post with saying that I hate tomatoes! I will eat just about any fruit and vegetable, except tomatoes. I hate the acid taste to them. I hate the juiciness of them. I really just hate them. I honestly have never even bought a fresh tomato. My mother gets so upset about the fact that I hate them. She eats them with just salt like you would an apple. Neither my sister nor I will touch them. We were raised in tomato country. I even worked as a tomato packer in junior high so to my mother this is a tragedy! Michael actually hates them as well.
With that said, we went to see the movie Julie and Julia. In one of the opening scenes, Julie is making bruschetta. It looked sooo good!! Michael has been drooling over it since we went to the movies. I don't know why he would want to try this, again we hate tomatoes. We went ahead and gave it a try. Michael's response.. I could learn to like tomatoes! This really was so good!! So good in fact that we had it 2 nights in a row and may even make it again this weekend! My mom would be so proud. It is so easy to make and comes together so fast. This would make a great appetizer for an Italian meal. We had it as a main course because we weren't very hungry. Even if you aren't a tomato fan, give it a chance at least once!! Enjoy!

I saw this recipe on Delish and adapted the following recipe from that.
Bruschetta
4 slices of Italian Bread cut into 1/2 in thick slices
A variety of tomatoes, seeded and chopped (We used 4 Romano Tomatoes to 1 vine ripe tomato)
1 clove of garlic
Basil chopped
2 tablespoons Extra Virgin Olive Oil (We used an olive oil that had been infused with garlic)
1 Tablespoon butter
Salt
Pepper
Parmesan Cheese
Balsamic Vinegar
Directions:
In a small bowl mix together the chopped tomatoes, basil, extra vigrin olive oil, 1/2 the garlic clove, salt and pepper. The basil, salt and pepper will be to your taste. Set aside.
Heat a skillet over medium heat. Add the remaining olive oil, garlic and butter to the skillet. Allow the butter to melt. Place the bread in the skillet and allow it to get brown on both sides. You are basically frying the bread.
Remove the bread from the skillet. Spoon the tomato basil mixture on top of the 4 slices of bread. Add Parmesan to each slice and drizzle with balsamic vinegar.
Serves 2.
