Quinoa and Black Bean

The first time I tried quinoa I was not impressed at all. I was determined to like it and have tried it a few other ways. Cooking the quinoa with corn and black beans is my absolute favorite. I have made this for lunch almost every week for the past month. I can't believe that I haven't shared it with you yet. Quinoa is a great source of protein and other nutrients so I plan to try it many other ways. Make sure that you rinse the quinoa before you cook it. If you are skeptical of quinoa, give it a shot and see what you think. Enjoy!!


Quinoa and Black Bean

Ingredients

1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro

Directions

1.Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

2.Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

3.Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

  2. Kristy, quinoa is considered a type of grain and can be found in your grocery near the Bob's Red Mill products. I have bought it at Whole Foods and Trader Joe's. It has so many wonderful health benefits. If you come across it at your grocery, pick it and give it a try.

  3. Yummolicious - I can't get enough quinoa, and I love, love, love beans. This is a perfect side dish any time of the year.
