Makes 9-11 muffins
Ingredients:
2 cups AP flour
scant 1 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. allspice
2 eggs
1/4 cup canola oil
1/4 cup butter, melted
3/4 cup milk
1.25 tsp. vanilla extract
Glaze
1/2 cup semisweet chocolate chips
2 Tbsp butter
1 Tbsp. corn syrup
1/4 tsp. vanilla extract
sprinkles (optional)
Directions:
Preheat the oven to 350 and grease a muffin tin.
Whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg and all spice. In a separate bowl, beat the egg with the canola oil, butter, milk and vanilla until well incorporated. Add the wet mixture to the dry mixture, combining gently.
Spoon the batter in the prepared muffin tins (I normally use a 1/4 cup measuring cup to fill the tins. Elly uses an ice cream scoop. Find what works best for you) and bake for about 18 minutes or until a toothpick inserted comes out clean. Cool completely.
To make the glaze, combine the chocolate chips, butter, corn syrup and vanilla extract in a double boiler (or in a stainless steel or glass bowl over some simmering water). Stir until everything is incorporated and nice and smooth.
Dip the tops of the muffins into the glaze and immediately top with sprinkles, if using.

I've been making donut muffins for years, but never thought to glaze them, great idea.
