Oatmeal Cranberry Cookies

Here is another wonderful cookie recipe that I shared with friends and family this year. This was an Oatmeal Raisin Cookie recipe that I got from Michael's mom. Mom's know best! Add raisins to the list of foods that Michael won't eat so instead of raisins in the mix, I added cranberries. These cookies were so good. Seriously!

I think out of all the Christmas cookies I baked this year, this one is definitely my favorite. It is a great twist to oatmeal raisin. I plan to make these again soon and add white chocolate chips to the mix as well. I will let you know how they come out. I expect the white chocolate to enhance the cranberries even more. Oatmeal Cranberry Cookies

Ingredients:

1 1/4 cup flour
1 teaspoon baking soda
1 cup butter or margarine
1/4 cup sugar
3/4 cup packed light brown sugar
1 package instant vanilla pudding
2 eggs
3 1/2 cups quick cooking rolling oats
1 cup cranberries

Directions:

In a bowl, mix flour and baking soda. Set aside.

Beat margarine and pudding until smooth and creamy. Add in eggs. Gradually add in flour mixture. Stir in oats and raisins.

Bake at 350 degrees for 10-12 minutes on an ungreased cookie sheet.
