Roasted Lemon Pepper Broccoli

I love vegetables. Love them! My husband on the other hand does not. We have more veggies on the do not eat list than on the eat list. So whenever I get a change to add veggies to a dish, I go for it. I have been looking for some vegetable sides that would go great with our meals. I had broccoli left over from a different recipe, so while he was out of town, I tried roasting it. Roasting broccoli is so simple to make and still has the crunch that he so loves. Roasting vegetables adds so much flavor to them. This is a great way to incorporate vegetables in your meals.




Roasted Lemon Pepper Broccoli

2 cups broccoli florets, bite size pieces
extra virgin olive oil
1 tsp lemon pepper
2 cloves garlic, sliced
salt & pepper, if desired*

Preheat oven to 400°F. In a bowl, toss the broccoli florets with the olive oil, garlic, lemon pepper & salt (if desired). Spread broccoli out on baking sheet in a single layer and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 15-20 minutes.
